House-cured meats, artisan salumi, and seasonal specialties — sourced from local farms and crafted in small batches at San Francisco's Ferry Plaza Farmer's Market.
Our Story
Fatted Calf Charcuterie began with a simple conviction: that the finest cured meats come from patience, local ingredients, and an unwavering respect for the craft. Every batch is dry-cured in-house, aged in our climate-controlled rooms, and shaped by the rhythms of the California season.
Our salumi, prosciutto, and sausages draw on centuries of Italian preservation technique — but the pork, beef, and poultry come from farms within a hundred miles of our counter. The result is charcuterie that tastes unmistakably of this place.
What We Make
Dry-cured hams, lonza, capicollo, and our signature finocchiona — each aged to develop deep, complex flavor.
Fresh and fennel sausages, chorizo, and seasonal specialties made from locally raised pork and poultry.
A curated selection of California and imported cheeses, house-made mustards, cornichons, and seasonal preserves.
Ready-to-serve boards and curated gift boxes, built to order for gatherings, celebrations, and corporate events.
